ROASTED MANGO SALSA
ONLY THREE INGREDIENTS!
This salsa is packed with flavor and only has three simple ingredients: ripe mangoes, roasted jalapenos, and chopped cilantro. Oh and just a little pinch of salt. The flavors are bright; they bursts in your mouth like a handful of sweet grapes. It's balanced with the touch of spiciness from the peppers and the ripe, tropical fruit flavor from the mango. !Here's how to make this
Roasted Mango Salsa:
First, chop 1 cup of mangos into bite-sized chunks, along with two medium jalapenos, and put them on a lined roasting sheet in a 475 degree F. oven for about 15 minutes, or until they're charred like the photo above.
Add the cup of roasted mangos to a cup of fresh, chopped mangos. (make sure your mangos are nice and ripe!)
Dice the roasted jalapenos, and 2 tbsp of cilantro, and mix it altogether with salt to taste.

PUT IT ON A FISH TACO!
Refrigerate or eat immediately. It tastes better the longer it marinates
