Roasted Grapes and Goat Cheese Cauliflower Pizza

Cauliflower crust pizzas are a brilliant invention. With my pizza addiction, I’m so happy they exist.  This crust, mixed with a handful of red grapes I got from the Farmer’s Market that I roasted with a little sugar, made a nice light dinner for a hot, summer day. Here’s how you make my Roasted Grape and Goat Cheese Cauliflower Crust Pizza.

Instructions
  1. Preheat the oven to 450 degrees and line a baking sheet with parchment.
  2. Spread the loose grapes onto the baking sheet, drizzle with olive oil and the sugar. Roast until slightly charred and bursting, about 10 minutes. Remove the grapes from the oven and set them aside in a small bowl. Reline the baking sheet and begin making the cauliflower crust.
  3. Rough chop the cauliflower bulb into bite-size chunks. Then pulse the chopped cauliflower in a blender or food processor with the fresh, peeled garlic cloves. You may need to do this step in batches.
  4. Drain the blended cauliflower in a clean washcloth to squeeze out the excess water. (They are naturally FULL of water). Add the drained cauliflower to a large bowl, add half of the grated parmesan cheese, the eggs, and salt and pepper to taste. Mix it all together.
  5. Oil your baking sheet, and mold the cauliflower dough into the shape of a pizza crust on the sheet. Brush the top with more olive oil, and add on half of the remaining parmesan cheese. Bake the crust until it's cooked and golden brown on top (about 15-20 minutes)
  6. Remove the crust from the oven, and set the oven to broil. Sprinkle the crust with the shredded mozzarella cheese and the rest of parmesan cheese. Evenly sprinkle on the dried thyme, goat cheese, roasted grapes, and strings of green onion. Broil it for 5 minutes until the goat cheese is gooey and slightly charred. SERVE!
