Doubled-Stuffed Raw Oreos

Remember being a little kid? Too short to reach the kitchen counter, but peering over the ledge of it while you pour yourself a glass of milk with your long, stretchy-kid arms? Doing all that upper-body movement just to work your way to that perfect moment when you could crawl onto the couch, prop your cold milk glass between your thighs, and pull open the tab of that plastic oreo container? Oh the empty, guilt-free calories we would consume as children! Completely oblivious of the larger worldly problems occurring right outside our front doors!  Well I can’t cure the obesity epidemic, and sometimes just losing my own extra 15 seems like too big of a challenge on its own, but sometimes, I want to go back to those moments, as a conscious and slightly more responsible adult, and indulge, without the guilt once again. And so I made something I’ve been craving for so long.  Like I’ve said before, something about raw desserts appeal to me so much more than regular desserts.  They’re so light, and the whole time I’m eating them, I imagine my entire body being nourished from my toes to the tip of my head. And because oreos are my TRUE comfort food, I needed to try a raw oreo out for myself. And lemme tell you, making them this way allows you to stuff them twice, trice and more. Here's a recipe for oreos that can bring us back there without any feelings of guilt. It's an easy raw recipe, because it uses almond flour, so no nut-soaking required here!

Ingredients
Raw Oreo Cookie
Servings: 2 in. oreos
Instructions
Raw Oreo Cookie
  1. For 4 hours, or overnight, remove the pits from your dates and soak them in a bowl with just enough water to cover them completely.
  2. Once your dates are soft, combine all the dry ingredients together(almond flour, cocoa, and sea salt) in a large bowl. Add in the maple syrup and vanilla extract, and combine.
  3. Taking your dates directly from the bowl they were soaking in, don't drain them too much (the excess water is not bad) break them apart with your hands inside of the dry ingredients. The dates should be soft enough to distribute easily throughout the almond flour to create a consistent dough. If not, throw everything into a food processor and pulse until it forms a dough.
  4. On a clean surface, roll out the dough to about 1/4 in thickness. Cut the dough with a 2 in cookie cutter. Place the cookies on a cookie rack and freeze for about 15 minutes while you prepare the double stuffed filling.
Double-Stuffed Filling
  1. In a food processor, pulse together all the ingredients until they form a sticky paste (coconut flour, coconut butter, maple syrup, and vanilla)
  2. Once the cookies are firm, carefully spread the filling on half of the cookies(fill them with as much or as little fillin as you like!), and top them with a cookie to make the classic oreo cookie sandwich!
