I’ve already rambled on to you about my sudden and premature seasonal love affair with fall, and here is another snippet of my sinful indulgences of the not-even-here-yet season. Except when I say “sinful” and “indulgent”  I should clarify that I actually have no belief that there is anything BAD about eating these Pumpkin Cinnamon Rolls Glazed with Banana frosting! If you follow my Instagram you probably know that I made these rolls with the exclusive intent of giving one of the cinnamon rolls away as a gift to my dear Boston friend. Obviously, Eric got one too, and after those rationings, I froze four additional buns.  But if you do the math correctly, that left two whole cinnamon rolls both at least 4.5 in in girth designated just for me.  MY BELLY ALONE. And nope, no regrets.   In my heart, I believe fall requires a diet comprised of at least a few things that will stick to your ribs.  Hearty things that will keep you warm in the coming winter for survival. And my justifications are: 1.) I live in Boston (a place no stranger to blanketing winters and back-to-back blizzards), 2.) global warming(!!!), 3.) hefty jackets that leave EVERYTHING up for the imagination + extra pockets for snacks…..and my final excuse, 4.) I’m in Grad school, so I need CONSTANT brain food.  I could think of more if required, but for me, I was sold at global warming.

Ingredients
Pumpkin Cinnamon Rolls (Dough)
Pumpkin Cinnamon Rolls (Filling)
Banana Glaze
Servings: 5in rolls
Instructions
  1. In a medium-sized bowl in the microwave or in a pan on the stovetop, heat the milk and butter together until just melted. Ensure It's well combined and then add in an ice cube to bring the heat to a lukewarm temperature.
  2. In another large bowl, add in the packet of yeast and pour the milk mixture over top of it and let it sit for about 3 minutes.. (You can also use a stand-mixer. I just made the dough by hand and it worked just fine.
  3. While that's working, in a separate bowl combine just 3 cups of the flour with the sugar and salt and add it to the yeast bowl. Mix it well, then add the egg.
  4. Start kneading it all together with your hands inside the bowl. If the dough keep sticking to the side, slowly add the other cup of flour, 1/4 cup at a time (saving at least a few tbsp for dusting), Continuing to knead for at least 10 minutes. Cover the bowl with a damp, clean cloth, and keep in the microwave to rise for at least 45 minutes.
  5. Once the dough has risen, punch it down, and roll it out about 1/8 in thickness on a dusted surface. Trying to keep it in a rectangular shape.
  6. Preheat the oven to 375 degrees, and have a baking sheet ready lined with parchment paper.
  7. In a separate bowl. Combine all the ingredients for the filing, and spread it thinly over every inch of the dough.
  8. Roll the dough into a cigar shape, and cut discs about 2 in thick for approx. 8, 5in rolls.
  9. Arrange them close together on the baking tray, and cover for another 20 minutes with a damp cloth.
  10. Remove the cloth and bake them in the oven, until puffed, golden, and cooked through, about 25 minutes.
  11. Remove them from the oven, and mix together all the ingredients for the glaze. Liberally pour over every inch of the cinnamon bun! Serve warm.
