This is Adeypoo! He’s my best friend’s son.  He’s almost three years old now! We are are like kindred spirits.  It’s pretty comical; he loves snacking on everything, he wakes up hungry and confused, looking for food, he freaks out about the tiniest booboos in life, and he needs constant love and attention all throughout the day. Just like me! haha My twin! He came to visit me in Boston.  He drove all the way up in a car for 4 whole hours with his mama just to say hello and spend a couple nights with me in the studio.  I made sure to keep him occupied, because I understood EXACTLY what he’d feel like if I didn’t.   I made them both Banana Cinnamon Waffles, and it just so happened to be #nationalwaffleday.  I think I was just nicely aligned with the universe because what are the chances of that.

When it was time to go to the Museum of Science, I baked off some homemade Cheez-it’s made with fresh grated cheddar and whole wheat flour, and packed it in a little tupperware so he could snack on it throughout the his visit.

His little chubby hands couldn’t keep away! <3 I felt good about feeding them to him, because there was nothing artificial about these crackers. And the cracker dough kept in the refrigerator, so I’d pull it out, chunk off a piece, roll it out, punch out whatever shape he wanted, and baked them off as he wanted, because they’re spectacular right out of the oven.  They’re easy to store both post and pre-baking, so I love that for my own comfort.

Ingredients
Servings: crackers (depending on the size of the cookie cutter)
Instructions
  1. In a food processor or blender, pulse all the ingredients, except for the ice water, together (the flours, the salt, the pieces of butter, and the cheddar cheese), until it comes together like course meal.
  2. Add the water one tablespoon at a time, continuing to pulse, just until it comes together into a ball.
  3. Transfer to a floured surface, form into a disc, and refrigerate for 20 minutes-1 hour.
  4. Preheat the oven to 375 degrees and line a baking sheet with parchment paper. Remove the dough and roll out into a sheet 1/8 inch in thickness. Using a floured cutter, cut shapes from the dough, and transfer them to the baking sheet. Sprinkle with the sea salt and bake for 15 minutes or until brown, puffed and perfectly crunchy. Serve!
