Green Apple Celery Slaw with Candied Pecans

THE PERFECT PICNIC SLAW FOR EASTER

For Easter this year, we wanted to share a recipe that we knew people could take outside while they dyed hide eggs for the kids and chill by the grill with their friends and family. Today is the first day of Spring and those are the type of fantasies I envision (all the while knowing Boston will be hit with another Blizzard tomorrow morning!)  It doesn’t mean we can’t enjoy the day, and celebrate with food that makes us feel good! This slaw is probably one of my favorite recipes, and because there is no mayonnaise or dairy in the recipe it does much better outside than a regular slaw would. It’s super easy, vegan, and I can pair it with anything/ put it on anything and I wouldn’t doubt it would taste better than without it. (The same concept as butter) I’m thinking these babies plus some seared salmon fish tacos next time?!

This year is particularly cool, because we’re participating in a Virtual Easter with a handful of health blogging friends from around the world. Because Eric and I are so far away from our families, and because I’ve gotten so close to our foodie family over social media and through blogging, some of us have decided to celebrate together, family-style. A fresh and flavorful crunchy, vegan slaw filled with green apples, celery, and cabbage, tossed in a avocado red wine vinegar dressing and topped with sweet and spicy cayenne-candied pecans.

Ingredients

Instructions
  1. Heat the oven to 400 degrees and line a baking sheet with parchment paper. In a small bowl toss the pecans with brown sugar, maple syrup, cinnamon, cayenne pepper, sea salt, and olive oil. Spread out on the baking sheet and cook for 10-15 minutes or until fragrant and brown. Remove from the oven and let cool.
  2. In a large bowl make the dressing. Break up the avocado with a whisk until it turns into a paste. Add the minced garlic, lemon zest, lemon juice, salt and pepper. Whisk until well combined. Drizzle in the olive oil until it turns the consistency of dressing.
  3. Add the vegetables (cabbage, onion, and celery) and the apple to the bowl. Toss until everything is combined. Top with pecans and serve.
